- Preparamos la quinoa según indique el fabricante. La que yo he utilizado de Carrefour, el tiempo de cocción son 11 minutos. Una vez lista, reservamos para cuando estén terminadas las verduritas.
- Pelamos y cortamos en pequeños trozos la cebolleta y la zanahoria. Lavamos los tres pimientos y los cortamos en trocitos de igual tamaño que los anteriores. Reservamos. Lavamos el calabacín y lo cortamos en pequeños dados. Una vez listas todas las verduras, procedemos a sofreírlas.
- Calentamos un poco de AOVE en una cazuela. Pochamos la cebolleta, los ajos laminados, y los tres pimientos a fuego muy suave, bajo tapa, durante 10 minutos. Añadimos la zanahoria y pochamos 10 minutos más. Ahora, añadimos el calabacín y pochamos otros 5 minutos. Sazonamos y condimentamos con media cucharadita de especias Ras El Hanout. Agregamos la quinoa y retiramos del fuego.
- Por último, preparamos dos huevos, siguiendo alguna técnica libre de grasas (Escalfados, cocidos, pasados por agua, a baja temperatura, etc.). Yo los he frito en el microondas, utilizando una pizca de aceite para pintar el recipiente donde los he hecho.
